Parotta is a popular South Indian flatbread made from maida (all-purpose flour), oil, and salt. It is typically served with a variety of curries or gravies. Here is a simple recipe to make parotta:

Ingredients:
- 2 cups all-purpose flour (maida)
- 1/2 teaspoon salt
- 2 tablespoons oil
- Water, as needed
- Ghee or oil, for frying

Instructions:
1. In a mixing bowl, combine the all-purpose flour and salt.
2. Add the oil and mix well until the flour resembles breadcrumbs.
3. Gradually add water and knead the dough until it becomes soft and pliable. The dough should not be too sticky or too dry.
4. Cover the dough with a damp cloth and let it rest for about 30 minutes.
5. After resting, divide the dough into small lemon-sized balls.
6. Take one dough ball and flatten it with your hands. Apply some oil on the flattened dough.
7. Start pleating the dough by folding it inwards from one end to the other, creating layers.
8. Roll the pleated dough into a spiral shape and tuck the end underneath.
9. Repeat the process with the remaining dough balls.
10. Take one spiral-shaped dough and flatten it with a rolling pin into a thin, round parotta.
11. Heat a tawa or griddle over medium heat and place the rolled parotta on it.
12. Cook the parotta on both sides, applying ghee or oil, until it turns golden brown and crispy.
13. Remove the parotta from the tawa and repeat the process with the remaining dough.
14. Serve hot with your favorite curry or gravy.
