Ingredients:
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 4 tablespoons ghee (clarified butter)
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1 cinnamon stick
- 4 cloves
- 4 cardamom pods
- 1 bay leaf
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)

Instructions:
1. Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
2. Heat 2 tablespoons of ghee in a large pot or pressure cooker. Add the cumin seeds, cinnamon stick, cloves, cardamom pods, and bay leaf. Sauté for a minute until fragrant.
3. Add the sliced onions and cook until they turn golden brown.
4. Add the minced garlic, grated ginger, and green chilies. Sauté for another minute.
5. Add the chicken pieces to the pot and cook until they are browned on all sides.
6. Add the turmeric powder, red chili powder, and salt. Mix well to coat the chicken evenly with the spices.
7. Add the soaked and drained rice to the pot and mix gently to combine with the chicken and spices.
8. Add 4 cups of water and bring it to a boil. If using a pressure cooker, close the lid and cook for 2 whistles. If using a regular pot, cover with a tight-fitting lid and cook on low heat for about 15-20 minutes, or until the rice is cooked and the water is absorbed.
9. Once the rice is cooked, fluff it up gently with a fork.
10. In a separate small pan, heat the remaining 2 tablespoons of ghee. Pour the hot ghee over the cooked rice and gently mix it in.
11. Sprinkle garam masala over the rice and mix gently.
12. Garnish with freshly chopped coriander leaves.
13. Serve hot with raita or any curry of your choice.
