Dal curry is a popular Indian dish made with lentils and various spices. Here's a simple recipe to make dal curry:

Ingredients:
- 1 cup of lentils (any variety)
- 2 cups of water
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 green chili, finely chopped (optional)
- 1 teaspoon of cumin seeds
- 1 teaspoon of turmeric powder
- 1 teaspoon of coriander powder
- 1/2 teaspoon of red chili powder (adjust to taste)
- Salt to taste
- Fresh coriander leaves for garnish
- 2 tablespoons of oil or ghee

Instructions:
1. Rinse the lentils thoroughly and soak them in water for about 30 minutes. Drain and set aside.
2. In a large pot, heat oil or ghee over medium heat. Add cumin seeds and let them splutter.
3. Add chopped onions and sauté until they turn golden brown.
4. Add minced garlic, grated ginger, and green chili (if using). Sauté for a minute until fragrant.
5. Add chopped tomatoes and cook until they become soft and mushy.
6. Add turmeric powder, coriander powder, and red chili powder. Mix well and cook for a minute.
7. Add the soaked lentils to the pot and mix well with the spices.
8. Pour in water and season with salt. Bring the mixture to a boil.
9. Reduce the heat to low, cover the pot, and let the dal simmer for about 20-25 minutes or until the lentils are cooked and tender.
10. Once the dal is cooked, you can adjust the consistency by adding more water if needed.
11. Garnish with fresh coriander leaves and serve hot with rice or roti.
