Chicken puffs are a delicious snack or appetizer made with a filling of cooked chicken and spices, wrapped in puff pastry and baked until golden and crispy. They are easy to make and perfect for parties or as a quick snack. Here's a simple recipe to make chicken puffs:

Ingredients:
- 2 cups cooked chicken, shredded or diced
- 1/2 cup onion, finely chopped
- 1/2 cup bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional, for some heat)
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)

Instructions:
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large skillet, heat some oil over medium heat. Add the onions, bell peppers, and garlic, and sauté until softened, about 5 minutes.
3. Add the cooked chicken, thyme, oregano, salt, black pepper, paprika, and cayenne pepper (if using). Stir well to combine and cook for another 2-3 minutes. Remove from heat and let the mixture cool slightly.
4. Roll out the puff pastry sheet on a lightly floured surface. Cut it into squares or rectangles, depending on the size you prefer.
5. Place a spoonful of the chicken mixture onto the center of each pastry square. Fold the pastry over the filling to form a triangle or rectangle shape. Press the edges together to seal.
6. Place the chicken puffs onto the prepared baking sheet. Brush the tops with beaten egg to give them a nice golden color.
7. Bake in the preheated oven for about 15-20 minutes, or until the puffs are puffed up and golden brown.
8. Remove from the oven and let them cool slightly before serving.

Enjoy your homemade chicken puffs! They can be served warm or at room temperature, and you can also serve them with a dipping sauce of your choice, such as barbecue sauce or ranch dressing.
