Egg roast is a delicious and easy-to-make dish. Here's a simple recipe for you:

Ingredients:
- 4 hard-boiled eggs
- 2 onions, thinly sliced
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- Curry leaves
- Salt to taste
- Oil for cooking

Instructions:
1. Heat oil in a pan and add mustard seeds. Once they start spluttering, add cumin seeds and curry leaves.
2. Add sliced onions and sauté until they turn golden brown.
3. Add ginger-garlic paste and green chilies. Sauté for a minute.
4. Add chopped tomatoes and cook until they become soft and mushy.
5. Add red chili powder, turmeric powder, and salt. Mix well.
6. Make small slits on the hard-boiled eggs and add them to the pan. Gently coat the eggs with the masala mixture.
7. Cover the pan and let it cook on low heat for about 5-7 minutes, allowing the flavors to blend together.
8. Sprinkle garam masala powder on top and give it a final mix.
9. Remove from heat and serve hot with rice, roti, or bread.
