Appam is a popular South Indian dish made from fermented rice batter and coconut milk. It is typically served with a variety of side dishes such as coconut chutney, vegetable stew, or chicken curry.

To make appam, you will need the following ingredients:
- 2 cups of raw rice
- 1/2 cup of grated coconut
- 1/4 cup of cooked rice
- 1/2 teaspoon of active dry yeast
- 1 teaspoon of sugar
- Salt to taste
- Water as needed

Here's how you can make appam:

1. Rinse the raw rice thoroughly and soak it in water for about 4-5 hours. Drain the water and set aside.
2. In a blender, grind the soaked rice, grated coconut, cooked rice, yeast, sugar, and salt together. Add water gradually to make a smooth batter. The consistency should be similar to that of dosa batter.
3. Transfer the batter to a large bowl and cover it with a clean cloth. Allow it to ferment overnight or for at least 8 hours. The batter should rise and become slightly frothy.
4. Once the batter has fermented, give it a gentle stir. If the batter is too thick, you can add a little water to adjust the consistency.
5. Heat a non-stick appam pan or a regular non-stick pan with a lid on medium heat. You can also use a traditional appam pan if you have one.
6. Pour a ladleful of batter into the center of the pan and quickly swirl the pan in a circular motion to spread the batter evenly. The edges should be thin and the center slightly thicker.
7. Cover the pan with a lid and cook the appam on low heat for about 2-3 minutes, or until the edges turn golden brown and crispy. The center should be soft and spongy.
8. Once cooked, gently remove the appam from the pan using a spatula and transfer it to a serving plate.
9. Repeat the process with the remaining batter to make more appams.
10. Serve the appams hot with coconut chutney, vegetable stew, or any other side dish of your choice.
